How to Make Glazed Brandy Sweet Potatoes
Winter is the time for potatoes. Savory, comforting carbs are the perfect companion to cold winter nights. To fulfill this need, we’ve found our favorite recipe for sweet potatoes glazed with brandy. This is traditionally a Thanksgiving dish, but it goes well as any winter evening dish, to be honest.
To make this Glazed Brandy Sweet Potatoes dish according to Taste of Home, you’ll need the following ingredients:
- 4 medium sweet potatoes
- 2 tablespoons of salted butter
- ⅔ cup brown sugar, packed
- ¼ cup raisins
- ¼ cup brandy
- 1 apple
- ¼ cup apple juice, unsweetened if you can find it
Wash off the sweet potatoes, and use a scrub scrubber if you have one around. If you don’t, just use your hands under some water to scrub at any spots that look a little dirty. Peel all of the cleaned sweet potatoes using a vegetable peeler. Then, cut them into about 1-inch pieces.
The next thing you’ll have to prepare involves the apple. Take the apple and peel it using the same vegetable peeler. Then, mince the apple. You should have about ½ a cup of very finely minced apple.
Heat Things Up
Grab a big pot and place it on the stove. Next, throw the peeled potatoes into it. Add enough water until they are covered in the pot. Then, turn the stove on and heat it up until the water begins to boil. While you’re waiting for it to bowl, turn on your oven and set it to 350 degrees.
Once the water is boiling, reduce the heat to a simmer. Don’t cover the pot! Just leave it for about 5 minutes to soften the potatoes. After 5 minutes, drain the water from the pot so just the potatoes remain.
Make the Potato Topping
Grab the rest of the ingredients, except for the brandy, and put it all into a saucepan on the stove. Heat it up and mix it all together. Then, turn off the heat and add the brandy, mixing it in as you add it in.
The recipe from Taste of Home recommends using an 8-inch baking dish, but if you want the potatoes a little crispy, you can use something a little larger to increase the surface area of the potatoes exposed to the heat of the oven. Grab what size dish you’d like, and put the potatoes in, followed by the mixture you’ve created in the saucepan on the stove. Put it in the oven for about 30 minutes.
